Glass Storage
In your book you mention that you store beans in glass jars and other things in glass as well-- What do you use as tops... I don't like the cheapish metal tops that come with mason jars, but I don't know an alternative.. Do you have any resources you can share for high quality glass jars...Also, what do you wrap your seaweed in when storing in cupboard (dry)

I’ve always used the convenient metal tops that come with the jars and, as food is not directly in contact with the metal, it works well for me.
I recall that my friend Betty http://www.gemcultures.com/kitchen.htm sells the plastic lids.
I also store seaweed in glass jars. These jars are typically available in food markets and variety stores during summer months and the holidays. Most natural food stores will special order them for you.

Do we need to refrigerate uncooked:
(1) beans
(2) nuts
(3) grains (eg brown rice, millet, quinoa, rolled oats)
(4) seaweed
during summer?

I always refrigerate nuts; but I do not refrigerate grains, beans and seaweeds.
However, for people who live in a hot and humid climate, refrigerating grains does help prevent infestation.
