I have read in many Ayurvedic texts that heating honey makes it toxic and I've noticed that many of your baking recipes contain honey. Can you please say something about this?
Thanks.

Re: Heated Honey
Good question. Heating honey destroys some of its beneficial properties such as its enzymes and makes it mucus forming. It seems a stretch to call this "toxic."
By all means, favor unpasteurized honey as a more healthful and delicious product for uncooked applications.
Yes, I do use honey in baked goods as well as some candies. As long as it's for an occasional treat (versus a daily staple) I've found no problem with heated honey.

Re: Heating Honey
the problem with agave is that it is a pure fructose and therefore NOT healthful.
