Greetings! I am new to the list - Paul's my name. Rebecca, I saw your recipe for spelt bread. Looks great! Do you know if it is adaptable to a bread machine? Do you or any others reading this post have a good source for other spelt bread recipes?

Yes. My book, The Splendid Grain, available on this web site, has wonderful recipes for non-wheat flat breads, quick breads and a naturally leavened bread.

Does anyone have a recipe for raspberry muffins or quick bread? I have some frozen raspberries and basic ingredients on hand. I don't have an electric mixer, so the recipe needs to work for hand-mixing. I don't have sour cream or buttermilk on hand which some nice-sounding recipes called for, and I don't like yogurt. Can I simply replace raspberries for blueberries in such recipes?

The Splendid Grain, accessible on this web site, has admirable recipes for non-wheat collapsed breads, quick breads and a by itself leavened bread.

Hi ,
I make spelt bread in my bread machine all the time. The model I have is 'Breville Bakers oven". The quantaties are
385ml Water
2Tblsp oil (I use olive)
1tsp sea salt
2tsp sugar (seems to work the same with honey/agave/maple etc too)
4 Cups stoneground whole spelt flour
2 1/2 tsp dried yeast (Tandaco is the brand I use here)
Put all ingredients in order listed above into bread tin, put into machine on the 'whole wheat' setting. I also choose the 'light' crust as the darker crusts are too crusty for us!!
The bread turns out the same as loaves I have made with whole wheat, only with that yummy nutty spelt flavor.
